Salicornia
In the calm waters of the esteros (tidal salt marshes) of the Bay of Cádiz, where sea and land come together and part each day at the whim of the tides, a culinary treasure grows: salicornia.
Nicknamed "sea asparagus", it has a slender, elongated shape. A mouthful that, at Casa Tino and Sinónimo, becomes the star of dishes evoking the stories, passions and traditions of the Barrio de la Viña, so closely tied to the seafaring heritage of Cádiz.
